Important security measures
When using electrical appliances, basic safety precautions should always be followed, including the following:
1. READ ALL INSTRUCTIONS.
2. Do not touch hot surfaces. Use handles or buttons.
3. Always plug the device cord into the wall outlet and set the temperature control to the desired temperature. To disconnect, turn the dial to the lowest setting and unplug the power cord from the outlet.
4. To protect against electrical shock, do not immerse this device, including cord and plug, in water or any other liquid.
5. Close supervision is required when any device is used by or near children.
6. Unplug from outlet when not in use and before cleaning. Allow to cool completely before putting on or taking off parts and before cleaning.
7. Do not operate any device with a damaged cord or plug or after the device is not working properly or has been damaged in any way. Return the unit to NESCO's factory service department for inspection, repair or adjustment.
8. The use of accessories not recommended by the manufacturer may result in injury.
9. Do not use outdoors.
10. Do not let cord hang over edge of table or counter, or touch hot surface.
11. Do not place on or near a hot gas or electric stove, or in a heated oven.
12. Extreme care must be taken when moving equipment containing oil or hot liquids.
13. Do not use the appliance for any purpose other than that described in this manual.
14. Do not use metal scouring pads on the outside of the oven. Parts can detach from the pads and touch electrical parts, creating a risk of electric shock.
15. When cooking, always place the roasting pan on an incombustible, non-combustible, heat-resistant surface. Never place it on carpets, furniture or other flammable materials. Operate the oven in a well-ventilated area, away from walls and other combustible materials.

NESCO Roasting Ovens have a long tradition in the home kitchen, beginning in the 1930s. But few kitchen gadgets can prove to be as current and useful today as they were in the past. NESCO roasters really keep up with cooking styles, preferences, occasions and family sizes.
Before long you'll see the many ways you can use your 18-Qt. roaster. Its mobility makes it a mobile kitchen tool at times and a valuable accessory at other times. Use it at home on your countertop in your kitchen (no more kitchen heat!)...or on a covered patio, basement, or garage...or away from home in a cabin. Whenever you use your casserole dish, you can cook a wide variety of your favorite dishes in a variety of ways: roasted, slow-cooked, roasted, steamed or poached. Know your 18-Qt. NESCO roaster
COLLECT.The high-profile, thick-walled aluminum lid is designed to efficiently manage heat and moisture. Two ventilation holes ensure that just the right amount of moisture can escape during cooking. During the cooking process, steam builds up inside the hob. When removing lid, always stand to one side and tilt lid to dissipate escaping steam.
QUADRO.A chrome plated or non-stick steel rack provides cooking flexibility. The rack fits into the cookwell and has convenient handles for lifting.
GOOD COOKING.Porcelain enamel or non-stick cookwell has a total of 18 qt. Capacity. It is removable for easy cleaning in the dishwasher or sink, or for storing food in the fridge.

How to Use and Care for Your 18-Qt. NESCO roaster
BEFORE THE FIRST USE
1. Completely unpack your NESCO Roaster. Remove cookwell and remove all packaging materials and information labels.Place the baking sheet in a
well-ventilated area on a heat-resistant surface.
Set the temperature knob to the minimum setting. Plug the cable into a 120 VAC outlet and turn the dial to the maximum setting of 450°F. Operate the oven empty (without the cooktop and lid) for about 60 minutes or until all odors or smoke disappear. Some smoke and odor are a normal part of the heating element "cure" and will not occur during cooking. When curing is complete, turn the temperature knob to the lowest setting, unplug the unit and allow it to cool.
2. Wash cover by steaming and grilling in warm soapy water. Rinse and dry. See the Care and Cleaning section for complete cleaning instructions.
How to operate your roaster
1. Place the cookwell on the heatwell.Always use the
Food Cookwell. NEVER PUT FOOD OR WATER DIRECTLY ON HEAT.
2. Preheating is recommended. To preheat, place the cookwell in the heatwell and cover. Make sure the temperature knob is on the lowest setting and plug the cord into a 120 volt AC outlet. Set the temperature controller to the desired temperature. Preheat for 20 minutes or until the red signal light goes out. Carefully place food in cookwell with hot pads.
3. The grid can be used for roasting or roasting without fat. Other foods such as meats, soups and stews are prepared without a grill.
4. Replace the cover. Always cook with the lid closed.
5. If the roaster oven has not been preheated, turn off the temperature control. Plug the cable into a 120 volt AC outlet. Set the temperature controller to the desired temperature. Fill cookwell with food as desired.
6. Cook food for desired time. When finished, turn the temperature knob to the lowest setting and unplug the cord from the 120 volt AC outlet. Allow roaster to cool and clean as recommended.
OBSERVATION:COOKING TUBE, BOX, LID AND ACCEPTED STEAM WILL BE HOT. USE CARE AND WARM PADS TO SEPARATE COVER OR REMOVE COOKWELL FROM HEATWELL.
care and cleanliness
1. After the NESCO oven has cooled, remove the lid, wire rack (if using) and cooking chute.Basket for sink and cookwell
place in warm soapy water or in the dishwasher. ATTENTION: Do not put the lid in the dishwasher.
2. COOKWELL PORCELAIN ENAMEL has a strong finish and provides easy cleaning and years of use. It leaves no smudges and remains attractive even with frequent use. However, it will shatter if subjected to heavy blows or abuse. Water stains or mineral deposits (indicated by a white film on the surface) can be removed with household vinegar or non-abrasive detergents.
3. NON-STICK COOKWELL is made of durable carbon steel. To maintain the non-stick surface, it is recommended to use rubber, plastic or wooden utensils. Avoid cutting food in the cookwell. The use of non-stick spray on the inner surface is optional. Avoid storing items in the cookwell that could scratch the surface. When frying or baking at high temperatures, you may notice an uneven band of discoloration along the sides of the pan. This discoloration is characteristic of the super hard non-stick coating used on the inside of the pan and does not in any way affect the performance or durability of the surface. With continued use, the discoloration will become less noticeable.
4. Cooked food can be removed with a non-abrasive cleaning sponge and a non-abrasive detergent such as Soft Scrub
®
or Bon Ami®. Do not use abrasive cleaners or steel wool as the surface can be scratched.A WARNING:To easily remove cooked food residue, place the Cookwell in the Heatwell; Then fill the cookwell with hot water. Cover and heat at 350°F for 30 minutes. Turn off and let cool completely. Wash well as above.
5.NEVER IMMERSE THE ROTISSERIE IN WATER.To clean, wipe the outside of the pan with a damp cloth and dry. Do not use abrasive cleaners on the outer surface.

useful tips
THE BREAD OVEN MUST ALWAYS BE PREHEATED FOR 20 MINUTES.
ROAST BEEF
• The meat roasted in your NESCO Roaster keeps it juicy and tender. For extra browning, you can add 1/2 tsp. Add golden sauce to oil or margarine and spread over the skin before frying.
• Cooking less tender cuts of meat will make them very tender. Adding a sauce or sauce makes them tastier.
• To sear meat, preheat oven to 450°F. Add the margarine, cover and cook until lightly browned, 10 to 15 minutes per side. Stir the ground beef once. Time varies according to the amount of meat.
• Alternate method of browning braised turkeys: Follow recipe directions with these exceptions: Preheat NESCO oven and set temperature to 400°F. Roast the turkey at 400°F for the first hour. Reduce heat to 350°F using recipe time, 13 to 18 minutes per pound. During the last hour of roasting, drain any juices well and reduce the temperature to 400°F.
TO COOK
• Sliced meat and vegetables should be uniformly sized pieces.
• Remember that slow cooking allows little moisture to escape, so add extra liquid sparingly.
TO ROAST
• Use the rack to place casserole dishes and baking sheets during cooking. This allows for more even cooking.
• Two bread pans fit in the tub. One meat and one vegetable or two buns can be baked at the same time.
• Cover the baking sheet with aluminum foil and use it as a baking sheet.
• Most 1 and 2 Qt. Casseroles, 9-inch pie plates, and most 9x13 baking sheets will fit in the cookwell. Place the baking sheet on the rack for more even baking.
• Three 1-1/2 qt. The pans fit in the cookwell. Ideal for preparing meat, vegetables and potatoes at the same time. When baking bread, one or two loaf pans are recommended.
• Ready meals can be baked in the roasting oven. Follow package directions.
VAPOR
• Steaming is fat-free, so it's an easy way to prepare tasty, nutritious, low-calorie meals.
COOKING SLOWLY
• With slow cooking, the heat is very gradual. This allows for a very slow boil, aided by keeping the lid closed; No need to tinker.
• How to change a default recipe to slow cooking: for exampleallRequires 30 minutes in a standard recipe, slow cook about 1 1/2 hours at 200°F to 250°F.
• When slow cooking meat and poultry, it is not necessary to use the grill. The low temperature prevents the meat from sticking to the bottom of the vat.
• Remember that slow cooking allows little moisture to escape, so add extra liquid sparingly.
